When it comes to the perfect barbecue, the right rubs and sauces can make all the difference. Whether you’re a seasoned pitmaster or just getting started, the right combination of spices and flavours can take your meats to the next level. At Barbecue Bazaar, we believe that rubs and sauces are essential to creating mouthwatering dishes that will have your guests coming back for more. In this blog, we’ll explore how rubs and sauces can elevate your cooking and enhance the taste of your meats. Why Are Rubs and Sauces Important for Barbecue? Rubs and sauces are more than just a way to add flavour to your barbecue—they play a crucial role in seasoning, tenderness, and even the overall appearance of your dishes. Here’s how they work: Rubs: Creating a Flavourful Crust A rub is a blend of dry spices and seasonings that you apply to the surface of your meat before cooking. The key to a great rub is balance. A good rub should provide a combination of sweetness, heat, saltiness, and aromatic flavours, which will form a flavourful crust as the meat cooks. For Beef: Beef can handle bold and intense rubs, such as those with garlic, black pepper, and chili powder. A simple salt and pepper rub, also known as a "steakhouse rub," is perfect for a perfectly charred crust. For Pork: Pork pairs wonderfully with sweeter rubs that incorporate brown sugar, paprika, and cinnamon. The sugars caramelize during cooking, creating a deliciously sticky and flavourful exterior. For Chicken: Chicken is versatile and can be seasoned with just about any rub, but blends with lemon zest, thyme, or garlic can help bring out the delicate flavour of the meat without overpowering it. Sauces: Adding the Finishing Touch Sauces are typically applied during the cooking process or after grilling, offering an additional layer of flavour and moisture. The right sauce can complement or contrast the flavours of your rub, adding complexity and depth to the dish.Sweet Sauces: Sweet BBQ sauces, made with ingredients like honey, brown sugar, and molasses, are ideal for pork and chicken, as they balance the richness of the meat with a sugary glaze.Tangy Sauces: Tangy sauces, often based on vinegar, mustard, or citrus, work beautifully on fatty meats like ribs or brisket. The acidity cuts through the richness and enhances the overall flavour profile.Spicy Sauces: If you’re looking to add heat, spicy sauces made with chilies, hot peppers, or cayenne can provide a kick that perfectly contrasts with a sweet rub or the richness of the meat.       How Rubs and Sauces Improve the Taste of Meat Rubs and sauces don’t just season your meat—they transform it. Here are a few ways they enhance the flavour of your BBQ:Building Layers of Flavour The combination of rubs and sauces creates complex layers of flavour that change as the meat cooks. The rub penetrates the surface of the meat, creating a crust packed with flavour. The sauce, meanwhile, adds moisture and additional flavor on top. Together, they provide a fuller, more satisfying taste experience.Balancing Richness and Acidity Barbecue meats, especially fatty cuts like pork ribs or beef brisket, can benefit from the balancing act of sweet and tangy flavours. A tangy BBQ sauce cuts through the richness of the meat, while the sweetness of the rub adds a complementary touch. This balance makes each bite more interesting and enjoyable.Caramelization for Texture Both rubs and sauces play a role in caramelization. As the meat cooks, sugars in the rubs and sauces caramelize, creating a crispy, flavourful crust. This adds texture and visual appeal to your barbecue. A perfectly caramelized crust not only tastes amazing, but it also gives your dish that desirable "grilled" look that everyone loves.   Enhance Your BBQ with the Right Rubs and Sauces At Barbecue Bazaar, we offer a variety of rubs and sauces to suit every style of cooking. It adds heat and depth to your meats, especially when paired with a tangy vinegar-based sauce.Tangy Mustard BBQ Sauce: A vinegar-based sauce with a punch of mustard and a hint of honey. It’s a BBQ classic for a reason! Tips for Using Rubs and Sauces Apply rubs generously, but not too thick. A good coating of rub should cover the surface of the meat, but don’t overdo it or you might overwhelm the flavour.Let your rubs sit. For the best flavour, allow your rub to sit on the meat for at least 30 minutes before cooking. For deeper flavour, you can refrigerate your seasoned meat overnight.Sauce during the last stages of cooking. If you're grilling with sauce, wait until the last 10-15 minutes to apply it. Sauces can burn if cooked for too long, so be sure to add it when your meat is almost done. Ready to take your grilling game to the next level? This week’s pick is not only our best seller, but one for the beef lovers: Hardcore Carnivore Black If you love a bold, rich crust on steak or brisket, Hardcore Carnivore Black is a rub worth having in your BBQ lineup. Known for its deep black colour and savoury, pepper-forward flavour, this rub is designed to help create a striking bark and a seriously impressive finish on red meat. It’s a popular choice for people who want a stronger, more dramatic flavour profile without overcomplicating the cook. For BBQ enthusiasts who enjoy cooking steak, brisket or burgers at home, it’s an easy way to take your results up a notch. What does it taste like? Hardcore Carnivore Black is all about bold, savoury flavour. It brings a rich seasoning profile that works particularly well with beef, helping build colour and texture on the outside while complementing the natural flavour of the meat. Rather than being overly sweet, it leans more towards a robust, smoky, savoury finish — which is exactly why it’s become such a favourite for steaks and low-and-slow cooks. What should you use it on? This is a rub that really shines on beef and red meat. It works especially well with: Steak Brisket Beef ribs Burgers Tomahawk steaks Roast beef Lamb, if you like a bolder flavour If you’re the kind of backyard cook who likes a proper crust on a steak or wants to build bark on a brisket, this is the sort of rub you’ll keep reaching for. Rod’s Cook Idea: Hardcore Carnivore Reverse-Seared Steak One of the easiest and most rewarding ways to use Hardcore Carnivore Black is on a thick-cut steak. What you’ll need 2 thick-cut steaks Hardcore Carnivore Black Olive oil or a light coating of oil Butter, optional Fresh rosemary or thyme, optional How to cook it Lightly coat the steaks with a small amount of oil, then season generously with Hardcore Carnivore Black on all sides. Let the steaks sit while you prepare the BBQ. Set up your BBQ for two-zone cooking, with one side lower heat and the other side hotter for searing. Start the steaks over the lower heat side until they are almost at your preferred internal temperature. Then move them over the hotter section to finish with a fast sear, building a dark crust on the outside. Rest the steaks before serving so the juices settle back into the meat. Serve with grilled vegetables, potatoes or a simple salad. Why we like this one for BBQs Outdoor living makes it easy to cook outside for much of the year, and a rub like this suits that style perfectly. It works just as well for a quick Friday night steak as it does for a more serious weekend brisket cook. That versatility is part of the appeal. You can keep things simple and use it on burgers and steaks, or go bigger with beef ribs or brisket when you’ve got more time to spend around the BBQ. For anyone shopping at BBQ Bazaar for rubs that bring a bit more impact to the plate, Hardcore Carnivore Black is a strong option. Tips for getting the best results To get the most from this rub, keep a few simple things in mind: Use it generously Because it’s made for bold meats like beef, it can handle a proper coating.
